So it begins....

     The decision to blog of my effort to lose weight and going vegetarian and vegan was not hard. Since I consider myself a foodie and enjoy cooking I wanted to use the hunger I have to learn new things to reach a goal I have been struggling with for the last 4 1/2 years. LOSE 40LBS!!!!!!!!!!! Watching the Biggest Loser you know it is possible. I know there is a lot of hard work involved and I am not knocking the people who have lost 10lbs and up a week but the luxury of a trainer and cook is not an option for all. Since cooking has become a passion of mine I began to go in the direction of eating healthier and buying books to educate me. My downfall is ice cream. Ben and Jerry is not my friend as I pass the ice cream section at the grocery store. In my quest for cookbooks I found a few authors who share my taste. Gradually the effort to change how I eat has been consistent. I no longer desire meat and processed foods. (Most processed foods)
They say your taste bud changes overtime and my taste buds no longer desire meat. There are changes in my body and energy level since I have stop eating meat. Stomach is no longer feeling bloating after eating. A big challenge for me will be the free lunches at work. It is always the same pizza, Quiznos and some Italian restaurant that caters. You never know what lunch is until it is delivered, so I bring my own lunch. I love great tasting food and you do not want to be around when I eat something that taste like crap. Trust this decision was not hard because eating out can be expensive.
Right now I am using 1000 Vegan Recipes by Robin Robertson , By Any Greens Necessary by Tracy McQuirter, Vegan Soul Kitchen: Fresh, Healthy, and Creative African-American Cuisine by Bryant Terry and few recipes from www.allrecipes.com. There a few more books that have caught my eye but for now they will stay on my wish list. Pictures of my dishes will follow the blog along with page numbers and which books I use. Exercise includes walking, elliptical machine and P90X. The elliptical will be used at least 4 days a week.
